Stacey Morrison's Strawberry & Blueberry Muffins

Make 12 medium-sized muffins

1 ½ cups flour
2 tsp baking powder
½ cup icing sugar
2 SPCA Blue Tick eggs
¼ cup of vegetable oil
2 Tbsp yoghurt
½ cup milk
½ cup blueberries
½ cup chopped strawberries

Preheat the oven to 180°C. Grease a 12-hole muffin tray.

Sift together the flour, baking powder and icing sugar.

Combine the eggs, oil, yoghurt and milk.

Stir wet ingredients into dry. Add fruit and mix until just combined. Spoon into the muffin tray.

Bake for 25 minutes or until tops are golden and spring back when pressed lightly. When cool, dust with icing sugar if you wish.
